Fresh corn off the cob, pasture raised eggs, organic cream, grated sweet onion and aged cheddar…all nestled in freshly-made pie crust and baked to golden brown, bubbly perfection. Soaking up the last of this beautiful summer!
Ingredients
- 3 large pasture raised eggs
- 1/2 small vidalia onion
- 1 tablespoon all purpose flour
- 1 teaspoon salt
- 1 tablespoon honey
- 1 1/3 cups half and half
- 3 tablespoons butter, melted
- 2 cups fresh corn kernels, cut from the cob
- 1 deep dish pie crust, preferably homemade
Instructions
Preheat your oven to 375. Combine first five ingredients in a food processor and blend until onion is finely chopped. Add half and half and butter. Process until blended. Transfer to a large bowl. Mix in corn and pour into crust. Bake until filling is slightly puffed and top is golden, 45-50 minutes. Transfer to a rack to cool slightly. Serve warm, with a light salad of greens tossed in olive oil, a squeeze of lemon, salt and pepper.
