Buttery Phyllo Bites with Feta, Chile Crunch + Hot Honey

8 sheets phyllo dough
1/2 stick butter, melted
1 block feta cheese, cut into thirds lengthwise
Chile Crunch (link in bio to buy mine! 20% off through Monday)
Hot honey
Sesame seeds for garnish

Preheat oven to 375°

Brush each of your sheets of phyllo dough with melted butter. Top with a new sheet and repeat until all eight layers are buttered.

Place your three blocks of feta along the long side of the phyllo. Top feta with generous amount of chile crunch. Roll the feta into the phyllo. Cut into 12 equal slices. Place each piece in a muffin tin. Bake for 20-25 minutes until golden brown. Top with hot honey and garnish with sesame seeds.

Episode 7 - Thanksgiving Sides
Slow Roasted Turkey Thighs with Garlic, Chile, Lemon + Herbs

4-6 Turkey thighs
Seasoning salt
Pepper
2 cups olive oil
One head garlic, cut in half
2 peels of lemon zest
4-6 chiles de arbol
Fresh herbs (I used thyme)

Preheat oven to 275°

Season your turkey thighs liberally on top and bottom. Place them skin side up in a glass casserole dish. Place garlic cut side down, and tuck lemon zest and herbs around the chicken as well as chilies. Pour your olive oil all around the sides of the turkey as well as underneath. The oil should come up to the skin and cover all of the meat.

place your casserole dish in the oven and allow to slow braise for 3 to 4 hours, until turkey skin is deep golden brown. Removed from oven and serve.

Buttery Dinner Rolls 1 cup water 2 tablespoons me

Buttery Dinner Rolls

1 cup water
2 tablespoons melted butter
1/2 cup milk
2 tablespoons honey
1 tablespoon active dry yeast
4 cups organic all purpose flour
1 1/2 teaspoons sea salt
Melted butter for brushing

Preheat your oven to 400°.

In a small sauté pan, heat water, milk, honey and melted butter to 110°. Then pour into a glass bowl the mixture will heat very quickly, it only takes a minute or so. If it gets past 110 and° mixture to sit in the glass bowl until the temperature comes down, during occasionally.

Add liquid to the bowl of your stand mixer with the dough attachment. Sprinkle the yeast evenly on top, give it a quick whisk to combine. Let the mixture sit for five minutes until the yeast is activated and bubbly.

Add your flour slowly with mixer on low and then increase speed to medium-low for 4-5 minutes until dough forms a ball. Transfer to a greased bowl and let rise for 15-20 minutes.

Gently punch the dough down turn it out onto a flat surface. Divide into 15 equal pieces and roll into balls. Place in a 9x13 greased dish and cover with a towel to rise for another 15 minutes. They will only rise a little bit, not too much.

Brush with melted butter and bake for 15-17 minutes until just starting to brown. Remove from oven and serve. These rolls stay soft and perfect. They’re also great for making and freezing and then using for lunches!
