Is shrimp ceviche one of the best summertime apps or light dinners, ever? I love how citrusy, bright, flavorful it is! This recipe is easy and delicious. A must try!
Ingredients
2 pounds raw, wild Mexican shrimp, or shrimp of choice
1/4 cup red onion, thinly sliced
1 jalapeno, deseeded and chopped
3/4 cup seedless english cucumber, chopped
1/2 cup red bell pepper, chopped
1/2 cup fresh cilantro, chopped
1 avocado, peeled and diced
3/4 cup freshly squeezed lime juice
1/4 cup freshly squeezed lemon juice
1/3 cup freshly squeezed orange juice
Salt to taste
Directions
Place the chopped shrimp, onion, jalapeno, cucumber, tomatoes and bell pepper and cilantro in a large bowl. Pour lime, orange and lemon juices over the top and gently stir to combine. Season with salt. Cover ceviche and refrigerate for at least two hours, or up to eight hours. Before serving, gently stir in avocado. Serve with tortilla chips!
