This easy sheet pan dinner is on the regular rotation in my house. It’s so super tasty and very simple. Although I’ve included a fajita spice blend recipe, you can make this even easier by using a store bought blend. The Frontier Co-op Mexican Fiesta Spice is AWESOME…my favorite brand, for sure.
Ingredients
- 3lbs organic boneless/skinless thighs, cut into strips
- 2 red bell peppers, seeded and sliced
- 1 green bell peppers, seeded and sliced
- 2 red onions, sliced
- 3 poblano peppers, seeded and sliced
- Olive oil
- Salt and pepper
- 1/4 cup fajita seasoning
- Fresh limes, sliced
Fajita seasoning
- 2 tablespoon chili powder
- 3 teaspoons cumin
- 2 teaspoon ground black pepper
- 2 teaspoon salt
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2teaspoon crushed red pepper
Instructions
Preheat your oven to 425°. Toss the chicken, peppers and onions with a generous amount of avocado oil. Add fajita seasoning and generously season with salt (preferably my To Everything There is a Seasoning Salt :)) and pepper. Spread in one layer and top with lime slices. Roast for 25 minutes. Serve with corn, flour or (my fave) @sietefoods tortillas!
